Kevin, I'd suggest you visit an upholsterer and get some padding removed from the seat cushion(s). If they are Airtex, call them and discuss it.
My seats were old and thin but nicely shaped and quite comfortable so I had lots of head room. I've ridden in other Coupes with new, thick seat cushions and I was bumping my head on the canopy. Sling seats are definitely not needed. The designer, Fred Weick, was 6' 4" tall.
