I am 6.1 too and I bought my Ercoupe with bucket seats as well. They did not 
work for me.
So I reverted the seat installation and replaced the bucket seat with the 
original seat frame plus the seat upholstery and some interior panels that set 
me back over $1000. 
I don't know if you want to do that. You can try to lower your bucket seats by 
lowering the backrest a bit. That gives your head more room and you are leaning 
a bit backwards so to say. Your arms will be long enough to reach the panel.
If you don't like the bucket seats in general, the only way I see is to go with 
the original seat frame. All other seats will make you sit higher and being 6.1 
this is not what you want.

I am a new owner and purchased a ercoupe with bucket seats but i need to lower 
the seats and not crtazy in putting in a sling seat I am 6' 1" and i purchased 
this airplane unseen but when i flew in one i fit ok in a sling seat so now i 
have a challenge so looking foward in to fixing my bucket seats which is very 
comfortable
