Or more exactly, you perhaps can do it through Preferences.app, not sure about it; but more importantly, that's the wrong approach. GNUstep gui use fixed layouts (so if you choose another font, you will likely have display problems) and are not dependant of the resolution (eg everything is vectoriel, which is why everything can be antialiased using eg the art backend), so in theory you should just set up the DPI and things will look bigger/more detailed (eg, we don't work with pixels). Sadly.. I think it doesn't work right now :-/ even if alex malmberg worked a bit on it..
