It's strictly for rendering more pixels. Not higher resolutions.
What I meant by my statement was SLI renders more pixels more
noticably at high resolutions so let's say a game is only
getting 30fps at 1600x1200 you could in theory double that with
SLI. In practice it about holds true. At lower resolutions
though a ceiling is usually hit with just a single card making
SLI a waste of money. 

As for HIGH resolution monitors like the Apple displays, those
actually utilize both DVI outputs to attain their native
resolution because any single output from a card can't do it on
it's own.
