GSX Server runs like VMware Workstation.  You can run several host
VM's at the same time.  Unlike VMware Workstation where you can only
run one VM at one time.
I.E. You install it on a Windows Server or Linux install system like
Workstation.

ESX Server is VMware's VM Server software.  ESX is a Linux ( Redhat I
think ) install that VMware has tweaked.  You have a nice web
interface for installing VM's and advanced features like VMotion. 
With VMotion you can have (N) number of ESX servers running at the
same time.  You run Windows or Linux VM's on ESX server.  You can then
move the Windows or Linux VM's from one ESX server, to another with
out having to shutdown the VM's.

ESX server is a really cool product.  I don't know how much longer it
is going to be around if XEN figures out how to do it's own version of
VMotion.  XEN is also much faster than VMWare.
