I'd like to be able to install my existing OS into a VM after the
fact. Outside of this proof of concept, can any of the existing VM
products do that?

This is called P-to-V ( physical to virtual ). I've done it in VMware
ESX with good success. Looking at the website it appears it may be
windows only however.
