are you looking for a netflow collector or a lan monitor?
tools you will probably want to look at
ntop

(straightforward top-like interface to network activity monitoring)
rrdtool
http://oss.oetiker.ch/rrdtool/
(more of a toolkit for writing your monitoring package)
RRD supports gathering information from switches and routers
(basically anything with an snmpd)
