Been there, done that. Sure, it's a hack, but it works. If your EV's battery is a reasonable voltage (at least 96v, 108v is better), household hair dryers can do OK for windshield defogging. They can be annoyingly noisy though.
They look much better and make less noise if you can find room for them under or inside the instrument panel, and plumb them to the original defroster vents. Use one for each vent. I also tried using a "curly top" hair dryer for cabin heating. It didn't really have enough heat output, though. BTW, don't ever try to use the dryers' built in switches. They're AC rated and will arc-weld themselves closed on 96v+ DC. Connect your hair dryers through a suitably-rated contactor.
