There are several EV-conversion component sources you could use, some of
those EV businesses are on the evdl. IMO I suggest you select a design that
suits your driving and weather condition needs. One Canadian EV component

-I'll assume that 80kph top-speed is not when towing your boat but when you
and your old-lady are out bopping around town  (not towing boat, but with a
2 adult load)

- I suggest you plan your range when in winter temps (else the EV is useless
for half the year), and also add 20% more of range capacity to your design
for pack aging (as packs age, they lose capacity)

- If I remember correctly there is nil public EVSE in your area, so your
charging will mostly be at home. While a 3kW for overnight to charge would
likely be fine for light use, I recommend you have a 6kW charging ability
for during the day. 

You stated you want a work horse, and beyond loving to drive your EV so much
you will find things to do with it, I suggest we take a lesson from what
Willie does on his farm with his EVs. Since you won't have his ability to
put one on charge and drive a different EV to get tasks done, I am
suggesting your conversion design give you the flexibility to charge at 3kW
most of the time at night, but also allow for a 6 or 10kW charging ability
during the day. Imagine you doing a task in the morning, and fast charging
during a two hour lunch, so you can do more task in the afternoon, etc.

A 700kg 4x4 EV is possible. I drove a 1814kg(4000lb/2ton) S-10 Blazer for
over 15 years.
But it cost much, much more than your budget. So, what you will get for only
$8k may not suit your needs.
IMO you should look at your alternative plan of using the other ice you have
to do the workhorse tasks, and use the $8k to bag/buy a light Leaf type EV
for just bopping around town.
