Not sure about Ubuntu, but on Fedora you need to configure the Mail Notification application once you have installed it. On Fedora you do this by System Menu -> Preferences -> Mail Notification. You then need to fill in the relevant fields in the resulting dialog box. For example, add a new mailbox of type Evolution and select you Inbox folder, switch to the Message Popups tab and enable popups. There are a number of different options you can experiment with. Once you've finished configuring you should be able to repeat you experiment with minimising Evolution and sending an email from GMail.
