Hi :) With Ubuntu you can install a previous version over a more recent one without losing your data. Even the settings for most things can stay unharmed and used in the older version. It also works for upgrading to a newer version directly.
Run the normal installer but when you get to the "Partitioning" section choose "Manual", "Advanced" or (in 11.04) "Something else". It's usually the last option of the 3 options given. In some releases it's the 4th of 4 options. The other options tend to have pretty graphics so it's harder to spot the one at the bottom that has no picture. When you select it the drives get re-scanned so it's a bit of a scary moment if you haven't installed Ubuntu many times before. You get to a page that shows a list of all the partitions on all the drives so this can be used to do a full install to a usb-stick or memory card. It's also good for setting different partitions as different "Mount Points" such as a separate /home partition. Note that one of the columns has a heading "Format?". Any partitions that get formatted get wiped clean so if you make sure they are all UNticked then you keep all the data & settings on each partition.
