Hi,
it depends on your evolution-ews version. Try to right-click the EWS'
account name in the left folder tree in the Mail view and pick from
there "Subscribe to folder of other user", to get only certain folders,
or you can configure a new EWS account, with the same credentials as
your current EWS account, only check in the Receiving Email tab the
"Open Mailbox of other user", which will show folders of the user you'll
pick (supposing you're allowed to open that user's mailbox).
The first is part of evolution-ews 3.6.0+,
the second will be part of 3.8.0+.
