You can subscribe basically to any folder with the first option, you
either pick the predefined name, or if you know the folder ID, then you
can paste there a folder ID too (it is visible in Evolution's
"Permissions..." dialog, accessible in context menus on mail
folders/calendars/..., and can be copied from there).

When you use the second feature, then you get everything like if you
created a direct account for the other user.
