Is this part of the problem? That is a POP3 option, not IMAP - with IMAP everything is on the server, always, and what you see in Evolution mirrors what's on the server. It sounds like you have configured the account to use IMAP when you really wanted POP. You can check this by going to Edit -> Preferences -> (Account name) -> Edit -> Receiving E-mail the top line of that page should say "Server Type: IMAP" (or POP) Also POP mail is delivered into the "On This Computer" INBOX (in the absence of any filters), IMAP mail will be in a folder tree headed with the Account Name (usually the email address).
