Two ways to get a sound when receiving email: 1) The generic approach: having the mail preferences, new mail notification set to play a sound file. 2) The specific aproach: having a filter play a sound file when specific criteria are met. One could also use different sounds for different filters.
To have a sound for just one folder, just turn off the generic mail notification sound, and add a sound action to the filter that populates that folder. This assumes your folders get populated by Evolution filters rather than by procmail or some other mechanism.
