I don't remember exactly, but IIRC I once have tested this myself and
everything worked fine, using a symlink for ~/evolution to a directory
on another partition.
As Andrew said, a backup may be handy. Just copy the ~/evolution
directory to the Reiser FS partition, rename the ~/evolution directory
and create the symlink.
