To me, it seems that text email *is* the default, since in the Tools->"Composer Preferences" General tab, "Format messages in HTML" is *not* on by default (I think). Also, on the Contact window, "Want to receive HTML mail" is off by default. While I disagree with NotZed on the modernity of using HTML mail, I *am* glad that the default is text.
