I think the question was how to make it NOT use the greek word for Friday but instead show the english one. Not how to show "On .... wrote" to greek. Try this Make sure evolution is totaly dead (I think the command was named killev back in 1.2). run "LC_ALL=en_US evolution" (or use en_US.UTF-8). Everything in evolution will be in english.
