Why use fetchmail, if you use Evolution? It will do the same as 
fetchmail does (for the POP accts in your situation).

You can run a POP server and an IMAP server at the same time. I do. I 
read the mail at work, thru the home firewall, via IMAP, in Windows. 
When I get home, I use Evo to POP the messages into local folders 
there.

Granted, this means I can't read old, archived mail while away from 
home, but if I did want that, I'd use IMAP from both locations.

Postfix. Great program.

Use SASL to authenticate to your mail server when away from the home 
LAN.
