With one physical disk volume that you currently have it won't make much
difference whether you dump everything into one big partition or create
separate partitions.
The only benefit of creating separate partitions on your RAID5 volume would
be to control the disk space utilization. As someone else pointed out a few
days ago on this mailing list, you don't want the OS to run out of disk
space. So you may want to create a separate partition just for the OS and
keep Exchange files out of it. This way if Exchange grows out of control, it
will not kill the OS.
Other than that - you won't gain anything else.

You need separate *physical* volumes if you want to optimize your server's
performance. Simply partitioning your existing RAID5 into logical volumes is
not going to buy you anything.

thinking something along the lines of 3 partitions

Just not sure since on 5.5 you would run the Exchange optimizer to move some
files (logs files, ect)  to other partitions to optimize the server for
better performance .  

And since this server is going to also be a domain controller I wanted to
get some feedback on how others have set up the partitions for similar
configurations...

Well you already have a RAID5, what else can you do to it?

It seems that you only have 3 physical disks. Can't really do too much with
that other than a RAID5 or RAID1 + Hotspare.

If you had more physical disks, I would suggest to build at least a RAID1
and a RAID5.

  I have a Dell server with 72 gigs on raid5. I'm looking to install 2003 AD
and exchange 2003 on that server.  My question is what is the best
configuration for the 75 gig raid set that is going to hold 2003 Active
directory  and Exchange?
