With one physical disk volume that you currently have it won't make much difference whether you dump everything into one big partition or create separate partitions. The only benefit of creating separate partitions on your RAID5 volume would be to control the disk space utilization. As someone else pointed out a few days ago on this mailing list, you don't want the OS to run out of disk space. So you may want to create a separate partition just for the OS and keep Exchange files out of it. This way if Exchange grows out of control, it will not kill the OS. Other than that - you won't gain anything else.
