Have you had a look at NeverFail for Exchange. Your second server could be up and running in minutes.

I know that if we move mailboxes to a 2nd server and that if users open outlook that the servername change will be easy if both server are up, but in my disaster recovery plan, how can I setup all that so users won't see that the 1st server is down ???
