Depends...

Is this a G3? If so, the nics are capable of gigabit. Are you plugging
into a gigabit switch? I can't hardly imagine the need for teamed
gigabit ports. But heck, if you have the free gigabit switch ports, why
not?

If you are plugging into 100mb ports on the other hand, I think you'd
definitely want teaming.

 I'm installing an HP DL380 server for an Exchange server.  This server
has dual NIC's.   In the HP configuration tool, It gives you an option
to team the NIC's.  Would you recommend that or just use a single NIC?
This server is going to be a main mailbox server.
