SMTP logs show activity as the message is being received by the server. Do you have anything stuck in the SMTP queues?

At what point does the log generate activity - before or after it can be tracked as an actual message? We have antigen for AV & SPAM on the mail server, but logs there show no activity from the sender. Any thoughts?
