I have seen it used in medium and large companies for frontend\bridgehead
servers, but I personally would steer clear of backend\mailbox servers
being hosted on VM (and if you are going to do it be sure to use ESX, not
GSX) due to the critical nature of those boxes (and support issues).

I have used ESX version of VMware to host frontends and bridgeheads in
prodution with no issues or problems.  There is the issue of support and
its a grey line with Microsoft depending on your relationship with them. 
Normally PSS won't touch Exchange hosted on a VM with a 10 foot pole, but
if you have a TAM you may be able to twist their arm into giving limited
support (that is ...give you 5 minutes to take a peek and at the first
sign of wierdness they may bail and point the finger at VMware).

Overall from what I have seen it works best for the light-weight Exchange
boxes that are expendable (not MB servers).
