Bring up the second one, move the mailboxes, public folders and everything to it. Run Exchange setup on the old server and remove Exchange. Reinstall Exchange 2003 and bring it up in the site. Move everything back and remove the transfer server.
If your concern is redoing all the Outlook profiles with the server name worry not. Outlook will pick up the new server name and the mailbox moves automatically.
