I only have one exch 2000 server, IIS/OWA is on it also. I can't bring up a 2003 server beside it and mailbox move I don't think. Even if I bring up a second 2000 Exchange box I still have to do the front end first. I may just upgrade the standalone and let the users take the pain. Unless you have a better idea. I have plenty of time and hardware.
