We did something similar (Single Exchange 2003). We were org.au and needed to add unsw.edu.au. Arranged new MX records; Primary to us, Secondary to UNSW (in case ours is down) Added new RP; this did get a bit tricky as some staff needed to use the org.au as the primary address, others needed the unsw.edu.au. We use a custom attribute to make the distinction.
Check your SMTP connector properties too, I didn't have to make any changes but you might. I'm far from expert at Exchange so, I encourage people to comment if my advice is wrong, misleading or incomplete.
