Probably tools/options/mailsetup and the send/revieve button (haven't
used remote mail much.
You may also want to look at the cached exchange option

I recall on my Exchange 2000 server there was some way to turn off the
questions about accessing the address book in Outlook during a
synchonization. I have lost those instructions. Do they work the same on
Exchange 2003? Can you tell me where to find the instructions?
