Ok. And how do I do that? Please understand I know how to create new users
and DLs, etc. and that's about it. :-) I've never set up an Exchange server
from scratch. Is there a nice FAQ on how to do that somewhere? I'll be more
than happy to educate myself if there's something to read. At least then I
can ask *better* questions. :-)

You'd need to enable archiving/journaling. There's no way to prevent
users from permanently deleting items (well, you can try using GPOs
(well, maybe not in NT 4) to remove the option to purge deleted items,
but that only stops people who are not sufficiently devious). By
archiving you reduce the number of people who could then purge to those
who have access to the archive, and that's a much smaller subset to
shoot.
