I know I'm preaching to the choir here Martin... Someone is first, someone is last. Rarely is it the same firm each time. If the people consistently getting the updates out first have the least stable software do you sacrifice stability for speed of updates?
If you want the best balance you find a vendor like oh... Sybar^H^H^H^H^Hmicrosoft who builds a stable and reliable framework capable of utilizing the AV dat files from multiple vendors. At that point the speed of updates from a particular AV vendor for a specific virus outbreak is of less concern. Norton is what I'd consider a tier 1 AV solution for Exchange and there are only a couple of other vendors/products I'd put in that category.
