If you are talking about archiving mail from the information store and not to a .pst using Outlook (I know... "BAD") then take a look at the solutions available at http://www.microsoft.com/exchange/partners/archivingandcompliance.asp . I know of customers using IXOS, KVS or Legato solutions.
