If you don't something discovered, you must have a properly enforced records retention policy, and all copies destroyed. Printing e-mail makes the printed e-mail discoverable.
Organizations that act ethically don't need to be afraid of discovery. I believe that organizations that force deletion of e-mail will end up with more problems than they solve. For example, a malcontent presents evidence against the organization that they retained in violation of the retention policy, which the organization cannot refute because it destroyed all the evidence in its favor.
