With only 55 boxes, you should be fine with that config, but it would be best to get the logs on separate spindles from the db. I have a 2600 with pretty much that same config, except 73GB drives RAID 1 with C: & D: volumes for OS & logs, respectively, and 4x73GB drives RAID 5, serving ~250 mailboxes just fine. It's not very scalable like this, so you'd have to add an external enclosure & more drives for performance.
