So regarding my second question, if I want to send email to certain domain
without using DNS, by specifying a SMTP server address in that domain, I
will need to create a new Internet Mail SMTP Connector just for this, right?
In Exch 5.5 IMC, it was much simpler.

Default SMTP Virtual Server can both send and receive.
Internet Mail SMTP Connector is actually not a physical entity. It is a
logical thing that brings some order in your SMTP traffic. It basically
specifies which SMTP Virtual Servers should be used to send mail and to
where, and how.
