Like wot he said, your DNS TTL for the MX records is set to 24 hrs (see www.dnsstuff.com ) so after adding the new preferences, check at www.dnsstuff.com that your DNS records look right, wait 24 hours and see what the flow is to the old address.
Check sending via gmail/hotmail to your domain and see that it comes via your new address The additonal problem is that some mail servers deliberately pick the higher preference, so you may well see traffc still flowing into the old address after 24 hours. So after 24 hours remove the old preferences and wait 24hrs. By then all traffic should of dried up to your old IP address as the old address is no longer being supplied by your DNS Check after another 24 hours and there should have been no emails via the old address. If there are none disable address. Once you have gotten them done, you can turn off the old interface and make sure you are working, and then remove the old MX and A records.
