That's an interesting question. A little research finds a CDO property CdoPR_CONTENT_UNREAD, which I suppose could be the basis upon which the icon is changed, but I haven't done the necessary reverse engineering to determine whether it in fact is what's used. I don't find any CDO property that is obviously used to flag a date and time that a message was read. That's not to say that such a cryptically named property doesn't exist.
