Well, as I understand it, even if your current server has a 64-bit processor, there is still no upgrade path from 2003 to 2007.
As Scharff said, rent a new server or buy one...you don't really have a choice, other than those two options. Install 2007 on the new server in the same org, migrate the mailboxes over to it and either decommission the old server or wipe it and readd it to the org as an Ex2007 server (Following all the proper procedures for removing it from the org first, of course).
