The array isn't created automatically. It is MAINTAINED automatically after it 
has been created. But it first must be created and all existing databases 
pointed to the new array...

Sure; remove Exchange from the old box(VM). Give replication a chance to occur 
(I would wait 24 hours but I'm in a global network), then install Exchange 
fresh. The array is created automatically; nothing extra need be done.
