You wanna book for Office 365? Or for Exchange 2016?
The products have begun to diverge. Anyway, I don't think a book on Exchange 2016 has been released yet, other than Stanek's books. (He's a very prolific author, but his books are usually based on the pre-release code, and therefore often vary significantly from the released product.) Two others that I know about are scheduled for September release.
