You'd need to modify the .prf file to include the name of one of the two new
servers (assuming you plan to decommission the original at some point)...
But I don't believe it would have any effect on existing profiles. Existing
profiles will update automagically the next time a user logs in after being
moved... Assuming the old server is still up.
