I just tried it. When you do that you receive both the standard OOO
message and the template you create. Moreover, you receive the reply
template for every message even if the OOO is configured to send once
per recipient.

You must use a custom form to change it. On the actions tab (in design
mode) you can change the behaviour of the default actions.
