Why not just stick an IIS 5.0 SMTP relay out there? If all you are doing is relaying, that is probably the most cost effecting.
If you have a little cash for the project, the best choice would be relaying through something like Trend Interscan on the DMZ for virus filtering before the traffic hits your exchange infrastructure.
