I wouldn't suggest that. Exchange will give up the RAM when the system requests it. It's the nature of how it works.
Are you actually seeing performance issues or do you just want to limit the usage? I have read some of the articles on Technet but they only talk about restricting the treads and we have tried that but it still has the same problems.
