You're looking at a restore my friend. I assume you don't have a DR environment [1]. So, get a PC with enough disk space to hold your IS. Get another PC and build it as BDC to your domain. Unplug it from your network and promote it to PDC. Build the second PC with large disk space as your Exchange box and do the restore there. After you restore, you can export the data to PST files.
Get your StICk as soon as you can. Use it on your security [2] team. S. [1] If you do have a DR environment then use that. [2] Do you really trust your security to these brain surgeons [3]?
