It is possible to change this behaviour. For Exchange 5.5 check out Q215335
For Exchange 2000, there is a setting within ESM for "Maintain per-user read and unread information for this folder" However we also use the Flag Status option here successfully. It gets round the issue of people with a preview pane marking messages as read automatically.
