like what ? the words ??

sounds like that would be almost impossible to do (without disabling the
MTA's).

Cutting and pasting content from an existing message cannot be distinguished
by Exchange from a message that was typed from scratch (even if the words
are 100% identical)

Some clarification might help, what exactly are you trying to stop ?

There are products around (Like Authentica) which do try and impose some
control on HOW recipients of an email interact with it, for example refusing
printing of emails, expiring the email after a specific time. Quite cool
technology actually, but as one of the other posters said, it still wouldn't
stop a screen capture (although the resulting format is not entirely useful)
