Could have been some third-party SMTP server in front of Exchange that re-aliased the address into an acceptable one.

This could be a couple things. One, many users see the display name and think that is their email address. I have people tell me their email address is "John Smith" or whatever all the time. My guess is that his display name has the funky N (sorry, I don't know the name of that character), and his email address did not. Another possibility is that (as you say) his old firm's software allowed non-compliant behavior. This happens all the time. Software often allows things to happen which should not.
