I always use: Control Panel -> Services -> highlight System Attendant -> right-click and select "stop".
It doesn't matter which ones you stop first. If you stop the wrong one, all dependent ones will stop first, so you don't make any egregious errors. Be sure to manually stop the spooler service, as well. Sometimes it likes to take advantage of the extended service shutdown times Exchange allows on the server.
