We have a similar setup... 40% of my users work at other locations and use offline folders to improve Outlook performance. We also auto synch their folders. We have configured Outlook to ask the user whether they want to work offline or connect when Outlook starts, so if they are interested in using an Outlook feature that doesn't work in offline mode such as non-synched folders private and public folders, view free/busy info, opening other users' folders, or OOA, they simply restart Outlook in "Connected" mode.
