These log files are pretty important. :) They are what exchange will use to recover your data after a restore. (You restore the database, then replay the logs). Yes, exchange will still work, up until you have a problem anyway.
There are two ways to keep to a minimum[1]: 1. Backup using an Exchange aware product 2. Circular logging. Also, circular logging = BAD. Or rather, if you want to be able to restore all your data, circular logging = BAD.
